We’re always fascinated by what can be made in an air fryer and these apple-cranberry fritters fall under that category. They’re sweet and tender and are covered in a simple homemade glaze. Delicious!
Prep time: 15 minutes
Cook time: 10 minutes
Servings: Makes 18 fritters
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 2 teaspoons baking powder
- 1 teaspoon ground cinnamon
- 1 teaspoon salt
- 1/2 teaspoon ground cloves
- 1/2 teaspoon ground nutmeg
- 1 large Granny Smith apple, peeled and diced
- 1 cup dried sweetened cranberries
- 1 cup cranberry-apple juice
- 3 tablespoons unsalted butter, melted
- 1 teaspoon vanilla extract
- 2 large eggs, lightly beaten
- 2 cups powdered sugar
In a large bowl, mix together flour, granulated sugar, baking powder, cinnamon, salt, cloves and nutmeg with a spoon. Add apple and cranberries and mix to coat well. Pour in 3/4 cup cranberry-apple juice, butter and vanilla and toss to coat. Add eggs and mix well to combine.
Line bottom of air fryer basket with parchment paper. Spoon 3 tablespoons of batter onto parchment paper and spray with cooking spray. Cook at 350°F for 6 minutes. Flip fritters, spray again with cooking spray and cook for an additional 4 minutes. Remove from air fryer basket. Work in batches, if necessary.
Combine powdered sugar and 1/4 cup cranberry-apple juice in medium bowl.
Let fritters cool slightly prior to applying glaze. Create a work station by placing a wire rack over a bowl. Position fritter on rack above bowl and drizzle glaze on top, covering completely. Shake rack to remove excess glaze. Set on another wire rack to allow glaze to set.
ORANGE & FIELD TIP: It’s best to apply the glaze to warm fritters so be sure not to let them cool too much before that step.
