BAKED EGGS FOR TWO

Ingredients
  

  • 2 tablespoons unsalted butter softened and divided
  • 2 teaspoons heavy cream divided
  • 4 large eggs divided
  • Salt
  • Ground black pepper
  • Chopped chives for garnishing

Instructions
 

  • Preheat oven to 375°F.
  • Divide butter equally between two ramekins. Spread butter on inside bottom and sides of ramekins with paper towel.
  • Place 1 teaspoon heavy cream in each ramekin. Crack 2 eggs into each ramekin. Do not break or whisk eggs. Season to taste with salt and pepper.
  • Bake until egg whites are set and yolk is desired consistency, about 15 minutes for a slightly runny yolk and 18 minutes for fully cooked. Let cool slightly. Garnish with chives. Happy eating, friends!
