Move over, Chocolate Covered Strawberries! There’s a new sweet treat in town – Cherry Brownie Bites. Sweet maraschino cherries are wrapped in fudge brownies then dipped in chocolate. Need we say more?
Prep time: 15 minutes
Cook time: 1 minute
Servings: Makes about 28 cherries
- 8-by-8-inch pan brownies (we used our Heart Fudge Brownies but left out the chocolate chips)
- 28-30 maraschino cherries (ones with longer stems work best)
- 2 cups milk chocolate chips
- 1 tablespoon coconut oil
Thoroughly drain cherries and set aside.
Place brownies in large bowl and break apart to form crumbles. Using a scoop that’s slightly larger than cherries, scoop brownie crumbles into palm of hand. Flatten brownie into circle and place maraschino cherry in center. Pull edges of brownie up around sides and top of cherry, leaving stem exposed. Pinch brownies around stem to secure. Place on parchment-lined baking sheet, stem side up. Repeat steps until all cherries have been used. Transfer baking sheet to freezer until set, about 10-15 minutes.
Place chocolate chips and coconut oil in microwave-safe bowl and microwave for 45 seconds. Stir until chocolate is smooth and creamy. Continue microwaving in 10 second intervals until fully melted, if necessary.
To coat, hold cherries by stems and spoon chocolate onto them, ensuring all sides are covered. Lightly shake off any excess chocolate, allowing it to drip off. Transfer cherries back to parchment-lined baking sheet. Transfer baking sheet to freezer until chocolate is set, about 5-10 minutes.
ORANGE & FIELD TIP: Make sure your brownies are on the fudgier side. When working with them, they should almost remind you of Play-Doh. If your brownies seem dry, add a little chocolate frosting to them until a fudgier consistency is reached.
