Howard’s mom absolutely loves chicken parmesan and we’re sharing our easy recipe for the classic comfort food favorite. A crispy breadcrumb coating, homemade marinara sauce and melted chunks of mozzarella cheese make a dish you’ll want time and time again.

Servings: Serves 8-10
- 1 cup all-purpose flour
- 2 large eggs
- 1 cup panko breadcrumbs
- 1 cup freshly grated parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon (plus additional to taste) salt
- 1/2 teaspoon paprika
- 1/2 teaspoon (plus additional to taste) ground black pepper
- 2 8-ounce boneless skinless chicken breasts, sliced in half lengthwise
- Olive oil
- 4 cups marinara sauce (we used our Classic Marinara Sauce)
- 8 ounces fresh mozzarella cheese ball, cut into 8 slices
- Cooked pasta, for serving
Preheat oven to 400°F.
Create a dredging station with three separate pie plates or bowls. Place flour and salt and pepper, to taste, in first pie plate. Place eggs in second pie plate. In the third pie plate, combine breadcrumbs, parmesan cheese, garlic powder, oregano, salt, paprika and pepper.
Working in batches, toss each piece of chicken in flour, coating well and shaking off excess flour. Dip chicken in eggs, coating well and draining off excess. Toss chicken in breadcrumbs mixture, coating well.
Pour enough oil into large skillet to ensure that bottom has a thin layer and heat over medium heat. Working in batches if necessary, cook chicken for 8-10 minutes, flipping halfway through cook time. Transfer chicken to paper towel lined baking sheet and repeat with remaining chicken.
Place a thin layer of marinara sauce in bottom of 9-inch by 13-inch baking dish. Arrange chicken on top of sauce and spread a small amount of additional sauce on each. Top each piece of chicken with 2 slices mozzarella cheese. Bake until cheese is golden brown and chicken is cooked through, about 15-20 minutes. Let cool slightly. Serve with pasta.
