FILLED CHRISTMAS TREE COOKIES

These jumbo-sized treats are a kids’ cookie dream come true. Fill them with your favorite yummy flavor and you’ll have the perfect Christmas snack for Santa.


Prep time: 20 minutes

Cook time: 10 minutes

Servings: Makes 12 cookies


Ingredients:

  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs, at room temperature
  • 2 tablespoons heavy cream
  • 1 teaspoon vanila extract
  • 2 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • Fruit preserves or jam

Directions:

In a large bowl, cream butter, sugar and eggs with a mixer on high speed, about 30 seconds. Add heavy cream and vanilla and mix with spoon. Sift flour, salt and baking soda into butter and sugar mixture and mix with spoon until soft dough forms. Form dough into 2 equal disks and wrap in plastic wrap. Refrigerate until firm, at least 1 hour.

Preheat oven to 400°F.

Roll out chilled dough on a lightly floured surface to 1/8-inch thick. Cut shapes using a 5-inch Christmas tree cookie cutter (we used this one). Transfer to parchment-lined baking sheets. Place about 2 tablespoons of fruit preserves or jam in center of half of cut cookies. Using a smaller star cookie cutter, cut out center of other half of cookies. Place cookies with cut-out stars on top of cookies with preserves and crimp edges with a fork to secure. Bake cookies until slightly golden, about 8-10 minutes.

Allow the cookies to cool for about 5 minutes then transfer to a wire rack to cool completely.
