
Nobody will dare call you a “mean one” when you give them one of these fun Grinch Cookies. They’re guaranteed to love them more than who hash or roast beast.

Cook time: 8 minutes
Servings: Makes 3-4 dozen cookies
Ingredients:
- 1/3 cup unsalted butter, softened
- 1/3 cup shortening
- 1 large egg, at room temperature
- 1 tablespoon milk
- 3/4 cup granulated sugar
- 1 teaspoon baking powder
- 1 teaspoon pure vanilla extract
- Pinch of salt
- 2 cups all-purpose flour
- 1 1/2 teaspoons green food coloring gel
- Powdered sugar, for garnishing
- Red Sparkle Gel Icing
Directions:
In a large bowl, cream butter and shortening with a mixer on high speed until light and fluffy, about 30 seconds. Add egg, milk, sugar, baking powder, vanilla, salt and 1 cup flour and continue beating on medium speed. Add remaining 1 cup flour and food coloring and beat until soft dough forms. Divide dough into 2 disks. Wrap each disk in plastic wrap and refrigerate until firm, about 2-3 hours.
Preheat oven to 375°F.
Roll out chilled dough on a lightly floured surface to 1/8-inch thick. Cut heart shapes using a 2 1/2 inch cookie cutter. Transfer to parchment-lined baking sheets. Bake cookies until edges are firm and bottoms are very lightly browned, about 7-8 minutes.
Allow the cookies to cool for about 5 minutes then transfer to a wire rack to cool completely. Sprinkle tops of cookies with desired amount of powdered sugar. Using red gel icing, draw small hearts in center of cookies.
