Us grown-ups are taking over this kid favorite and crafting our own irresistible version with crispy bacon, delicious sourdough bread and four types of cheese.

- 8 ounces extra sharp white cheddar cheese, shredded
- 8 ounces medium cheddar cheese, shredded
- 8 ounces mild cheddar cheese, shredded
- 1 cup mayonnaise
- 1/2 cup unsalted butter, softened
- 8 slices sourdough bread
- 5.2 ounce package Boursin spreadable cheese
- 12 strips bacon, cooked
Combine cheddar cheeses in large bowl. In a separate small bowl, combine mayonnaise and butter. Set aside.
Preheat nonstick skillet on stovetop over medium heat.
Spread 1/8 of Boursin cheese on one side of each slice of bread. Top 4 slices of bread each with 3 strips bacon. Top bacon with generous amount of cheese blend. Place remaining slices of bread on top of cheese, Boursin side down.
Spread mayonnaise and butter mixture on one side of bread. Working in batches, place sandwiches, mayonnaise side down, in preheated skillet. Spread mayonnaise mixture on remaining side of bread. Cook until bread is golden and cheese starts to melt, about 2-3 minutes. Flip sandwich and cook until bread is golden and cheese is fully melted, about 1-2 minutes.
ORANGE & FIELD TIP: We suggest letting the sandwiches sit for about 2-3 minutes prior to enjoying them so that the cheese doesn’t spread all over your plate.
