LEMON PEPPER CHICKEN

This lemon pepper chicken is the definition of a quick, easy, delicious dinner. Bright, fresh lemon and the kick of black pepper combine to make a flavorful and irresistible dish.

Ingredients:

  • Lemon juice (from 2 lemons)
  • Lemon zest (from 1 lemon)
  • 1/4 cup extra-virgin olive oil
  • 2 teaspoons ground black pepper
  • 1 teaspoon salt
  • 4 chicken breast cutlets

Directions:

Whisk together lemon juice, lemon zest, oil, pepper and salt in small bowl.

Pour 1/2 of lemon pepper mixture into large skillet and preheat over medium heat. Working in batches if necessary, cook chicken for 4-6 minutes, flipping halfway through cook time. Transfer chicken to plate. Brush with reserved lemon pepper mixture.
