If your little leprechaun is anything like ours, they’re going to love this simple sweet treat. Be sure to make enough because we have a funny feeling the adult leprechauns will go crazy for it, too.

Servings: Yields 14-16 cups
- 2 tablespoons oil (such as canola, corn or vegetable oil)
- 1 cup yellow popping corn kernels
- 24 ounce package almond bark, divided
- Green sanding sugar
- Mint Dark Chocolate M&M’s candies, divided
- Green food coloring
Heat oil in large heavy-bottomed pot over medium-high heat. Put 2-3 popcorn kernels into oil and wait for them to pop. Add remaining popping corn in a single layer. Cover and remove from heat for 30 seconds. Return pot to heat until popping slows to several seconds in-between pops, occasionally shaking pot to loosen popcorn. Transfer to bowl and set aside.
Place 12 ounces almond bark into microwave-safe dish and microwave for 1 minute. Stir and, if necessary, continue microwaving in 10 second intervals until fully melted and hot, ensuring not to burn mixture. Pour almond bark over popcorn and toss until coated.
Transfer popcorn to baking sheet and spread to a single layer. Sprinkle with sanding sugar. Top with desired amount of M&M’s.
Place remaining 12 ounces almond bark into microwave-safe dish and microwave for 1 minute. Stir and, if necessary, continue microwaving in 10 second intervals until fully melted and hot, ensuring not to burn mixture. Stir in food coloring until desired shade of green is reached.
Drizzle green almond bark over popcorn mixture and top with additional M&M’s.
ORANGE & FIELD TIP: Preparing fresh popcorn is really easy but feel free to use a prepared popcorn, if you prefer. We suggest using an unsalted and unflavored variety, though.
