MOM’S LASAGNA

We’re so fortunate to have the recipe for one of Howard’s all-time favorite foods – his mom’s lasagna. With tender sheets of pasta, a hearty meat sauce and wonderful, delicious cheese – take a bite and you’ll understand why it’s such a sought after meal.


Prep time: 15 minutes

Cook time: 1 hour 20 minutes

Servings: Serves 8-10


Ingredients:

  • 4 cups marinara sauce (we used our Classic Marinara Sauce)
  • 1 tablespoon extra virgin olive oil
  • 8 ounces baby Bella mushrooms, cleaned and sliced
  • 1 pound lean ground beef
  • 1 pound mild ground sausage
  • Salt and pepper, to taste (optional)
  • 15 ounces ricotta cheese
  • 2 teaspoons dried oregano
  • 2 large eggs, lightly beaten
  • 1/4 cup milk, plus additional, if necessary
  • 1/2 pound lasagna noodles, cooked and drained
  • 8 ounces shredded mozzarella cheese

Directions:

Preheat oven to 350°F.

Pour marinara sauce into medium pot and keep warm over low heat. Pour olive oil into large skillet. Add mushrooms and cook over medium heat until browned and reduced by half, about 5-8 minutes. Add mushrooms to marinara sauce. Place ground beef and ground sausage in same skillet mushrooms were cooked in. Cook until meat has lightly browned, about 8-10 minutes. Remove excess grease from skillet. Add marinara sauce to meat mixture and stir to combine. Season with salt and pepper, if desired.

In a medium bowl, combine ricotta cheese, oregano and eggs. Add milk and stir to combine well. If necessary, use additional milk until desired consistency is reached, ensuring not to make cheese mixture too soupy.

To assemble lasagna, create layers, working from bottom up, in 9-inch by 13-inch baking dish, in the following order: marinara sauce, lasagna noodles, marinara sauce, ricotta cheese, marinara sauce, mozzarella cheese, lasagna noodles, ricotta cheese, marinara sauce, mozzarella cheese, lasagna noodles, ricotta cheese, marinara sauce, mozzarella cheese.

Bake until golden brown and bubbly, about 1 hour. Let cool slightly.

ORANGE & FIELD TIP: Make sure your marinara sauce isn’t too watery or your lasagna will be more soupy. We like our Classic Marinara Sauce because it’s a thicker consistency and is perfect for lasagna.
