Charlotte LOVES our homemade Peanut Butter & Jelly Pockets but we have a confession – her daddies love them, too.
Prep time: 5 minutes
Servings: Makes 2 pockets
- 4 slices white bread
- 2 tablespoons peanut butter
- 2 tablespoons jelly
Place bread on flat work surface.
Place 1 tablespoon dollop of peanut butter in center of 2 slices bread, ensuring not to spread. Repeat with jelly on remaining bread. Place sandwich halves together.
Using a bread knife, trim off bread crust. Create pocket design by cutting off small bit of bread from each bottom corner of sandwich. Firmly press edges of sandwich with prongs of fork to secure, careful not to break sandwich.
CHEF CHARLOTTE TIP: Unless you like to eat a lot of these at one time like me, you can also put them in the freezer for up to 3 months. To defrost them, put them in the refrigerator overnight or pop them in the microwave on the defrost setting for up to one minute.
