
We gotta tell you – Rob’s sister makes a fantastic artichoke dip. We’ve taken her recipe and added some delicious fresh spinach. It’s a match made in heaven.

SPINACH ARTICHOKE DIP
Ingredients
- 1 pound fresh spinach
- 8 ounces cream cheese softened
- 1/3 cup mayonnaise
- 1/3 cup sour cream
- 12 ounce jar artichoke hearts drained
- 2/3 cup mozzarella cheese shredded
- 2/3 cup parmesan cheese shredded
- 2 cloves garlic finely chopped
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper
- Crusty bread for serving, optional
Instructions
- Preheat oven to 350°F. Prepare medium baking dish by spraying with non-stick cooking spray.
- Place 1-2 inches of water in large pot and insert steamer basket. Bring water to boil. Place spinach in steamer basket and steam for about 3-4 minutes.
- While spinach is steaming, combine cream cheese, mayonnaise and sour cream in large bowl. Squeeze all liquid out of artichokes then roughly chop. Add artichokes, mozzarella cheese, parmesan cheese, garlic, salt and pepper to cream cheese mixture and stir to combine. Set aside.
- Transfer spinach to colander sitting in bowl of ice water. Squeeze all liquid out of spinach then roughly chop. Add to dip mixture and stir well to combine. Transfer dip to prepared baking dish and flatten with backside of spoon. Bake until dip is bubbling and lightly golden brown, about 20 minutes. Serve with crusty bread, if desired. Notes
ORANGE & FIELD TIP: Make sure you squeeze as much liquid as possible out of the artichoke hearts and steamed spinach. It’ll help prevent your dip from becoming watery.
