In honor of the annual Florida Strawberry Festival held right down the road from us, we’re thrilled to share our recipe for this light and airy strawberry jam cake. It’s a delightful sweet treat.

STRAWBERRY JAM CAKE

Ingredients
  

  • 1 1/2 cups salted butter softened, divided
  • 1/2 cup granulated sugar
  • 1 cup plus 3 tablespoons seedless strawberry jam divided
  • 1/2 cup strong black coffee
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 3 large eggs at room temperature, separated
  • 1/4 cup sour cream
  • 1 teaspoon baking soda
  • 2 1/2 cups sifted cake flour
  • 3 cups powdered sugar
  • 1 tablespoon milk
  • 1/2 teaspoon vanilla extract

Instructions
 

  • Preheat oven to 350°F. Prepare 9-by-13-inch baking dish by spraying with cooking spray. Set aside.
  • In large bowl, beat together 1 cup butter and granulated sugar with a mixer on high speed. Add 1 cup jam, coffee, cinnamon and cloves and continue beating until combined. Lightly beat egg yolks and add to mixture.
  • In small bowl, mix together sour cream and baking soda. Set aside.
  • With mixer running, add 1/2 of flour then 2 tablespoons of sour cream mixture to butter mixture. Repeat with remaining flour and sour cream, mixing until well incorporated.
  • In a separate medium bowl, beat egg whites with mixer on high speed until stiff peaks form. Fold egg whites into batter.
  • Pour batter into prepared baking dish, spreading into even layer with back of spoon. Bake until toothpick inserted into center comes out clean, about 30-35 minutes. Remove from oven and allow to cool completely.
  • For frosting: In large bowl, beat together 1/2 cup butter and 1 cup powdered sugar with a mixer on high speed. With mixer running, add milk then 1 cup powdered sugar. Add vanilla, remaining powdered sugar and 3 tablespoons jam, mixing until well combined.
  • Spread frosting on top of cooled cake with offset spatula. Happy eating, friends!

Notes

ORANGE & FIELD TIP: If you’d like your cake or frosting a little on the pink side, add a little red food coloring until you reached the desired color.
